Your Role in the Culinary Experience
As a Chef de Partie, you will be an integral member of our kitchen brigade, managing a specific section and ensuring that all culinary creations are executed with the utmost quality, consistency, and artistry. You will adhere to the standards set by the Paris Society and the Luura brand, crafting exceptional dining experiences at either Mimi Kakushi or Lenea restaurant.
This position demands a solid grasp of culinary techniques, an understanding of diverse international cuisines, and a commitment to food safety practices. You must thrive in a high-pressure, fine-dining environment, where your creativity and keen attention to detail will ensure every dish is a memorable masterpiece.
Key Responsibilities
- Oversee and manage a designated kitchen station, maintaining seamless operations during service under the direction of the Sous Chef and Head Chef.
- Prepare, cook, and plate dishes in accordance with the restaurant's standards and recipes, aligned with the Paris Society concept and Luura brand guidelines.
- Ensure consistency in portioning, quality, and presentation for all dishes produced within your section.
- Conduct thorough mise en place preparation for your station prior to service.
- Inspect every dish leaving your section to confirm it meets our presentation, flavor, and temperature standards.
- Guide, supervise, and mentor Commis Chefs and junior kitchen staff in your section.
- Uphold exemplary hygiene, cleanliness, and food safety standards, ensuring compliance with HACCP regulations.
- Manage proper labeling, storage, and rotation of food stocks according to Luura's food safety protocols.
- Monitor inventory levels, assist with procurement of supplies, and aid in food cost management while reducing waste.
- Collaborate closely with the Sous Chef and Head Chef to ensure efficient kitchen operations and service delivery.
- Utilize and maintain kitchen equipment properly and ensure it is in good working order.
- Guarantee that all dishes are prepared and served accurately and in a timely manner during service.
- Prepare your workstation to be clean, organized, and ready for the next shift.
- Provide assistance to other kitchen sections as needed to maintain smooth overall kitchen operations.
