Your Mission: Fusing Operational Excellence with Strategic Vision
As the culinary leader, you will coordinate, direct, and oversee all culinary operations of the Pullman Lyon & Pampa Restaurant, including banquets and room service. You will be the custodian of quality, consistency, and the gastronomic identity of our venue.
On a daily basis, you will organize production based on occupancy forecasts and consumption patterns. You will supervise setups, structure teams, and ensure seamless coordination between the kitchen and dining services to deliver a smooth and efficient experience. Present at the pass during service, you will monitor sending times, dish temperatures, plating quality, and compliance with technical sheets.
You will create menus in collaboration with the Food and Beverage Director and the Executive Sous Chef, balancing creativity, Pampa's identity, and economic performance. With a keen eye on trends, you will instill a culture of innovation while maintaining a rigorous approach to cost structure and margins.
As an experienced manager, you will lead your team with high standards and empathy. You will promote skill development, participate in recruitment, conduct performance reviews, and foster a motivating and structured work environment. You will be a true coach, ensuring the well-being and working conditions of your kitchen and dishwashing teams.
Your role will also encompass significant management responsibilities. You will manage stock, conduct inventories, analyze consumption discrepancies, and follow up on orders. You will ensure adherence to budgeted ratios, participate in investment decisions, and guarantee the longevity of equipment. Economic performance is intrinsically linked to culinary excellence, with a focus on operational resource management.
As a hygiene and safety reference, you will ensure strict adherence to HACCP standards, compliance with food preservation practices, and respect for safety and environmental procedures, particularly within the framework of our CSR program.
