We invite you to bring your passion and expertise as a Korean Chef de Cuisine at Fairmont Jakarta, where you will play a pivotal role in transforming our Korean culinary offerings. Your primary focus will be to enhance the Korean cuisine featured in our all-day dining restaurant while also providing culinary guidance and support for banquet operations and in-room dining services, especially for our Korean clientele and special events.
The perfect candidate will exhibit a blend of authenticity and creativity, showcasing strong operational leadership skills while adapting traditional Korean flavors to fit a luxurious hotel environment. You will uphold the highest culinary standards and strive to deliver exceptional dining experiences to our guests.
Key Responsibilities:
- Oversee the development, execution, and continual enhancement of Korean cuisine, ensuring authenticity, consistency, and top-notch quality.
- Create and implement Korean menus for banquet events, VIP functions, and cater to Korean corporate or diplomatic clients.
- Maintain five-star standards in food presentation, taste, hygiene, and safety.
- Collaborate with the Executive Chef and culinary leadership team to align Korean offerings with the hotel’s overall concepts and seasonal promotions.
- Mentor and supervise kitchen staff, fostering strong product knowledge in Korean cuisine.
- Manage effective cost control, food waste reduction, and inventory planning.
- Source high-quality ingredients and collaborate with suppliers to ensure authenticity.
- Adapt menus to cater to international guests while preserving traditional Korean flavors and techniques.
