As a Pastry Chef de Partie in our team, you will play a crucial role within a group of 6 individuals.
Your Responsibilities Include:
Culinary Production & Excellence
Prepare all desserts for the à la carte menu, tasting menus, and seasonal suggestions.
Ensure daily mise en place and anticipate volumes based on activity (gastronomy, bistronomy, seminars, events, tea-time).
Guarantee precision in plating, balance of flavors, and consistent quality.
Organization & Management
Manage your workstation autonomously and meticulously.
Plan production while adhering to deadlines and service priorities.
Oversee stock management, raw materials, and orders related to your station.
Optimize material costs and minimize waste.
Adherence to 5 & Michelin Standards
Implement and enforce quality, hygiene, and food safety standards (HACCP).
Maintain a clean, organized laboratory that complies with current regulations.
Ensure impeccable consistency in execution, essential for maintaining the Michelin star.
Collaboration & Team Spirit
Work closely with kitchen and service teams to ensure smooth service flow.
Supervise and train pastry apprentices and commis.
Encourage effective communication among different dining points.
