Mission Principale :En tant que Chef de Partie, vous serez responsable de la supervision d'un secteur spécifique de la cuisine (garde-manger, chaud, pâtisserie, etc.). Votre mission principale sera d'assurer l'excellence des préparations culinaires tout en garantissant la qualité, l'hygiène et la régularité des plats, tout en encadrant les commis et en facilitant le bon déroulement du service.Responsabilités Clés :Préparer, cuisiner et présenter des plats conformes aux standards de qualité de l'hôtel ou du restaurant.Veiller à la qualité constante des mets préparés sur votre poste.Adapter les recettes en fonction des préférences des clients et des indications du Chef.Organiser votre plan de travail de manière efficace et anticiper les besoins de production.Assurer la bonne rotation des produits (FIFO) et gérer rigoureusement les stocks de votre section.Garantir la conservation appropriée et le rangement des produits alimentaires.Appliquer et faire respecter les normes d'hygiène HACCP et les règles de sécurité alimentaire.Maintenir la propreté de votre poste de travail en tout temps.Participer aux contrôles de température, traçabilité, nettoyage et désinfection.Encadrer les commis et apprentis assignés à votre secteur.Former les nouveaux employés aux techniques et procédures de travail.Collaborer étroitement avec les autres équipes pour assurer un service fluide et efficace.Être réactif face aux changements ou imprévus durant le service.S'assurer de la bonne exécution des plats pendant les heures de service.Communiquer avec le Sous-Chef ou le Chef de Cuisine concernant les besoins, ruptures ou anomalies.Participer activement aux briefings de cuisine et faire des propositions d'amélioration.Transmettre toutes les consignes importantes à votre équipe.
