Join our esteemed culinary team as a talented and creative Sous Chef - Chocolatier in Cairo, Egypt. This pivotal role involves overseeing our chocolate production operations, managing kitchen staff, and crafting exquisite chocolate-based desserts and confections. You will collaborate closely with the Head Chef to uphold the highest standards of quality, innovation, and food safety while efficiently managing daily kitchen activities and mentoring junior pastry chefs.

  • Supervise all chocolate production processes, including tempering, molding, enrobing, and artisanal techniques to guarantee consistent quality and exquisite presentation.
  • Invent and develop unique chocolate dessert recipes and seasonal offerings that cater to our organizational standards and customer preferences.
  • Guide and mentor pastry and chocolate production staff, ensuring they follow best practices in techniques, food safety protocols, and performance standards.
  • Ensure compliance with food safety regulations, HACCP standards, and kitchen hygiene practices across all chocolate production areas.
  • Manage inventory of chocolate, cocoa products, and specialty ingredients, optimizing costs while maintaining exceptional quality.
  • Coordinate chocolate production schedules to meet daily service demands and special event requirements.
  • Conduct quality control inspections on all finished chocolate products, ensuring they meet our specifications for taste, appearance, and texture.
  • Work collaboratively with the culinary team to customize chocolate creations for special dietary needs and client requests.
  • Train and assess staff performance, providing constructive feedback and identifying opportunities for professional development.
